Baxter Approves Preliminary Plat For Fiesta Cancun

Baxter Planning Commission voted to approve the preliminary plat for the long-awaited Fiesta Cancun restaurant.

Codes Inspector Bob Lane said that the restaurant will be located on the corner of Olan Maxwell Road and Highway 56. He said that the preliminary plat shows the restaurant at some 3,000 square feet on a plat of five acres.

“This will be a sit-down restaurant,” Lane said. “This will be one where you can go in, order a meal and sit down so we’re super excited about it. We certainly need some of those, and hopefully, in the future, there will be some more.”

Lane said that he and the other planning commissioners examined the footprint of the building, the parking, and the potential for water runoff. He said that the approval of the preliminary plat will allow the developers to begin moving dirt.

However, Lane said that the approval is contingent on the final review from the fire department, water and sewer department.
