Vertical Coffee Company Hopeful For May Opening Date For Location Expansion

A downtown Cookeville coffee shop is hoping for a May opening date for its new expansion across from its current location on Spring Street.

Vertical Coffee Company, formerly known as Broast, Co-Owner Hannah Davis said that the company’s roasting operations are outgrowing the current facility. She said that two of their regular customers, Lauren and Ben Greening, approached them with the offer to expand into the building they were purchasing.

“All of our roasting will be there, our production will go in there,” Davis said. “And then we will have a full-service bar in there for coffee and teas and our baked goods. So we will have more seating, an outdoor patio area, just an overall great experience for our Vertical customers.”

Davis said the process has taken much longer than usual because of supply chain and labor issues many developers are facing right now. She said that because the building being renovated is also older, they have to take more steps for codes inspections.

Davis said that after construction on the coffee shop side is complete, they have plans to turn the other side into a music and entertainment venue. As for the current location, she said that they hope to turn eventually turn it into a drive-thru.

“Once we kind of get our roasting facility moved in across the street, we’ve already done a few things to make an easier transition into a drive-thru,” Davis said. “That is one of the biggest things our customers ask us is, ‘Are you ever going to get a drive-thru, are you ever going to get a drive-thru,’ and so we are working and thinking logistically about how we can make that possible for our customers locally and as they come in.”

Davis said that customers also ask about parking for the location. She said that the Greenings are paving the lot beside the renovated roastery, and that parking will be available at the old location as well. She said that First Baptist has also allowed customers to use its parking lot for customers Monday through Saturday.
