The long-awaited Azteca Mexican Grill off of Nashville Highway opened its doors in Baxter on Thursday.
Community members, leaders, and customers came together for a ribbon-cutting and dine-in services. Owner Dora Pacheco said that finally being able to open is a long-time dream made into reality. She said there are several things she looks forward to with the opening of her business.
“To have my customers happy, grow, be able to help my community, and my Hispanic community too,” Pacheco said.
Pacheco said that will feature Mexican food such as fajitas and molcajetes. She said that as of right now, they are serving beer and working on getting their liquor license.
Customers were enthralled with the restaurant’s transformation from its previous life as a diner, and were complimentary of its decor. Pacheco said that the inspiration for the murals and decorations came from her country and heritage.
“Mexico it’s very rich in a lot of cultures,” Pacheco said. “A lot of different arts. So I just wanted to put a little piece of everything, and I think we made it.”
