Arete Fine Chocolate is targeting a September opening following delays in renovating the Haston Block Building in Spencer.
Founder David Senk said he hopes construction will be completed within the next couple weeks.
“The construction’s moving a little more slowly,” Senk said. “Every time we peel the onion back another layer we find something else that needs to be fixed. We had a little bit of structural work to do that surprised us last month. That set us back a little bit but we’re scheduled to wrap up construction in about the next one to two weeks.”
Once construction is completed, Senk said the process of moving equipment into the new facility will begin.
“Now it looks like a construction zone,” Senk said. “In a few weeks, it’ll start to come together and look like a really, really nice chocolate factory in a 110-year-old building that’s been really and fully refurbished.”
Senk and his wife, Leslie, first opened Arete Fine Chocolate in San Jose, California. The couple decided to move their business to keep costs down and to be closer to family.
Senk planned to have the business open by late July, but the construction delays forced them to push back the opening.
