Baxter Approves Food Truck Ordinance

The city of Baxter approved modeling its food truck policy off of Cookeville’s fee and rate structure Thursday night.

City Attorney Shawn Fry said Cookeville’s mobile food unit policy could carry over to how Baxter allows food trucks to operate. Baxter Mayor John Martin said he talked to the board and they feel comfortable having food trucks for two occasions.

“I think most of the board that I’ve talked to, the only ones that they really want to approve is if we do a festival,” Martin said. “Or there’s a special event if a business has a special event and it might be once a month.”

Martin said operators will need to present certification from the health department and proof of insurance to the city before getting approval. Martin said he and City Recorder Sharon Carlile will go over food truck applications.
